Beetroot Baby is a round red purple root vegetable with vitamin C and iron content. If harvested young at golf ball size, the root is sweeter and more tender. Leaves can be used in juicing, salads; the root can be steamed, or pickled in apple cider vinegar, black peppercorns and coriander seeds. Matures 7-8 weeks.
