A fresh mix of Top Taste tomatoes stars in this simple Frittata. Highlighted with basil this is a great weekday meal! Serve with a side of salad.
300g Mixed Top Taste tomatoes
1 Bunch Top Taste basil
2 Top Taste brown onions
85g Grated cheddar
Salt and pepper, to taste
- Heat oven to 180C. Heat oil in a frying pan and cook the onion on medium heat until softened and browned.
- Remove from heat, add the tomato, spinach leaves and basil, and toss together. Transfer all the ingredients to a 30cm x 20cm baking dish.
- Break all eggs into a large mixing bowl. Season the eggs to taste with salt and pepper and beat well, then pour evenly into the baking dish.
- Sprinkle with cheddar.
- Bake in the oven for 25 mins or until golden on top and set through.
