Frittata With Garden Fresh Tomato and Basil

A fresh mix of Top Taste tomatoes stars in this simple Frittata. Highlighted with basil this is a great weekday meal! Serve with a side of salad.

Frittata Ingredients:

300g Mixed Top Taste tomatoes 

1 Bunch Top Taste basil 

2 Top Taste brown onions

Olive oil

85g Grated cheddar

8 Eggs

Salt and pepper, to taste


  1. Heat oven to 180C. Heat oil in a frying pan and cook the onion on medium heat until softened and browned. 
  2. Remove from heat, add the tomato, spinach leaves and basil, and toss together. Transfer all the ingredients to a 30cm x 20cm baking dish.
  3. Break all eggs into a large mixing bowl. Season the eggs to taste with salt and pepper and beat well, then pour evenly into the baking dish.
  4. Sprinkle with cheddar.
  5. Bake in the oven for 25 mins or until golden on top and set through.
