Recipes from paddock to plate
As your capsicums grow in the backyard it’s important to keep a look-out for great recipes to use them in. Here’s one of our favourites at United Nurseries, PIZZA STUFFED CAPSICUMS:
3 capsicums, cut in half and seeded
200g mozzarella
150g ricotta
1/2 cup basil leaves, chopped
1 small onion, chopped
2 cloves garlic, diced
200g cherry tomatoes, chopped (or any tomatoes growing in your garden)
1.Preheat oven to 180 °C.
2. Combine all ingredients in a bowl and mix (except the capsicum).
3. Divide combination equally into the capsicum halves.
4. Bake for 20 minutes or until cheese is melted and brown.
