Radicchio wraps with chickpea salad

These wraps make for a light and healthy lunch! This wrap is packed with antioxidants, dietary fibre and vitamins, and it tastes great!

Ingredients:

6 Top Taste endive radicchio leaves

1 Top Taste Chilli Amigo Diablo seeds removed, chopped 

2 Cloves Top Taste Garlic, crushed

2 tbs Olive oil

4 tbs Top Taste curly parsley, finely chopped

2 Cans chickpeas, drained and rinsed

150g feta cheese, diced

Juice of 1/2 lemon 

salt to taste 

Method:

  1. Over low heat, in a fry pan, slowly heat the olive oil with garlic and chilli until the garlic is sizzling. Keep on the heat while stirring for sixty seconds.  Remove from heat and set aside to cool. 
  2. Once cooled, toss the chickpeas, parsley, chilli and garlic oil, feta cheese, lemon juice and season to taste.
  3. Spoon mixture evenly between radicchio leaves. 

Serves 2-3 

To eat; wrap the top of the leaves around the filling and eat like a bread wrap.
